An older lady saw me having trouble so she told me the secret- Put the coconut directly on the stove and heat it up. The skin comes right off and you can eat the coconut flesh in chunks. The flesh of a green coconut is very good for you too, especially the gut, but it doesn't look anything like the white flesh of the mature ones. But the first obstacle... opening the coconut to get the water! Here's a tool just for that, and it's easy to travel with (probably not as a carry-on though).
